Ingredients
- 2 Slices of sourdough or whole grain bread
- 1 Avocado
- 4 oz Smoked Salmon
- 1 Small Tomato (sliced)
- 1/4 Small Red Onion (thinly sliced)
- 1 cup Argula
- 1-2 tsp Everything Bagel Seasoning
- 1 tbsp Olive Oil
- Pinch Salt (to taste)
- Pinch Pepper (to taste)
Instructions
- Toast the Bread: Preheat your oven or toaster oven to 400°F (200°C). Place the slices of baguette or whole grain bread on a baking sheet and toast until golden brown, about 5-7 minutes. Alternatively, use a toaster.
- Prepare the Avocado: While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork until creamy. Season with salt and pepper to taste.
- Season and Serve: Sprinkle everything bagel seasoning over the top and drizzle with a little olive oil if desired. Enjoy!
- Add Some Eggs: (Optional) Eggs are a great source of protein, but i left it optional as sometimes folks just want a breakfast without eggs. In a skillet, cook the eggs according to your preference. For poached eggs, bring a pot of water to a simmer, add a splash of vinegar, and gently crack the eggs into the water. Cook for about 3-4 minutes until the whites are set.
- Assemble the Toast: Spread a generous layer of the mashed or chopped avocado on each slice of toasted bread.Top with smoked salmon, followed by slices of tomato and red onions.
- Tips: For added flavor, you can drizzle a bit of lemon juice over the avocado before assembling the toast.Feel free to play with other toppings like cucumber or radishes for an extra crunch!

Recipe Notes
- Bread Options: You can use any type of bread you prefer, such as sourdough or rye, for different flavors and textures.
- Avocado Ripeness: Choose a ripe avocado for easier mashing. It should yield slightly when pressed. If you don’t have time to mash the avocado, scooping out half and slicing it is a great alternative, just sprinkle a little salt and pepper to taste.
- Seasoning Variations: Feel free to adapt the seasoning based on your taste. Add a pinch of chili flakes for heat or fresh herbs like dill for extra flavor.
- Toppings: You can add other toppings like cucumber, radishes, or sprouts for additional crunch and nutrition.
- Meal Prep: The avocado can brown quickly; if preparing in advance, consider adding lemon juice to the mashed avocado to help preserve its color.
